"My husband wanted fish for dinner, I wanted fried, he wanted baked, so I made this for me for something different. I was surprised at the good taste. It has a light crispy crust with a slight bit of a tang."

  • 34 cup Italian seasoned breadcrumbs
  • 1 ounce dry ranch dressing mix
  • 2 12 tablespoons vegetable oil
  • 1 lb fish fillet
  • 2 teaspoons butter
  • 2 tablespoons olive oil

directions

  • Mix seasoned bread crumbs with ranch dressing and the oil. It will be pasty.
  • Dry fish off well and pat the crumb mixture on the fish.
  • Add butter/olive oil mixture to skillet and heat to frying temperature. Fry fish until light golden brown and fish flakes nicely.

We live in the country outside a small town in southwestern PA - no neighbors in sight. I have 3 great kids, 2 great son-in-laws, and 4 grandchildren. Kids are 34,29,24 - 2 girls and a boy. Grandkids are 8,5,2 & 5 mos. I enjoy cooking and baking for my family. I love to have everyone over for dinner and do enjoy the "hustle, bustle, and noise" of a growing family. My husband says he is blessed with a wife that "still cooks from scratch" and that enjoys cooking. I have always enjoyed my family. I currently work in a chain restaurant that serves home style food. My husband and I would love to travel. Our favorite destination is the Outer Banks in North Carolina - good food, nice people.
