Raisin Cinnamon Bars

"These are really good for a sweet tooth. They are relativly low in fat and sodium. You could add chopped nuts too, but I prefer them without."

  • In a bowl, combine butter and brown sugar until crumbly. Add egg and mix well. Gradually beat in coffee.
  • Combine flour, baking powder, cinnamon, baking soda and salt. Add to the coffee mixture; mix well. Stir in raisins.
  • Transfer to a 13x9x2-inch baking pan coated with nonstick spray. Bake at 350 degrees 18-20 minutes, until edges pull away from sides of pan and toothpick comes out clean.
  • Cool 5 minutes.
  • In a bowl, combine powdered sugar, vanilla and enough water to make it spreading consistency. Spread on warm bars.

    I love these bars! They aren't overly rich like some bars can be. The coffee flavor is subtle and the recipe wouldn't be near as good without it. For whatever reason, I needed to bake them for about 35 mins and they wanted to stick to the pan. Next time, I think I'll line the pan with parchment paper. Thanks for sharing this keeper recipe.

    Well, I can say I can't give this a real fair review as I totally messed up the recipe by adding a full stick of butter.:-) So that's why the 5 stars:YUMMY: Maybe a blessing, maybe not. This is what happens when I'm attempting to make more than one recipe at a time. Anyway, these are heavenly little bars Sweety. I did not make the icing for the top and instead spinkled with a mixture of cinnamon/sugar. I didn't think it needed anymore fat grams!! Made for 123 HitWonders and March's CoffeePhoto Tag~

    me and my friends just devoured this recipe. delicious! I now use the icing on lots of baked treats because it was really good, too.

    This was good, I did increase the raisins to 1 cup and also added in 2 teaspoons vanilla, for the icing I used 18% table cream with powdered sugar and drizzled it on top of the bars instead of spreading, thanks for sharing Sweety!...Kitten:)
