  • Preheat oven to 350 degrees. Spray 13X9 inch pan with cooking spray.
  • Sprinkle with parsley, lemon juice and salt.
  • Heat oil in small skillet; fry onion and garlic till limp.
  • Place tomatoes in pan and top with fish.
  • Pour onion and garlic mixture over fish, sprinkle the wine evenly on top.
  • Bake at 350 degrees for 30-40 minutes.

  1. I didn't have onion or tomato, but I used a chunky tomato basil sauce I had instead. I also used a bit of ground thyme, dill, and black pepper to season the fish before baking. My husband, 16 year old son and I are very happy with the results! Thanks for the recipe!!

  2. Delicious and super simple. I used Northern Pickerel and only needed 1 filet to easily feed the two of us. The tomato and onion bed was a new way for me to do fish and it was really tasty. Pickerel is a very bland fish so I used a homemade salt mix made with black Salish smoked salt and a few other stronger flavored things. The outcome was something special. Served with lemon and rosemary rice, honeyed carrots and a small green salad. Dinner was quick an easy banquet. Thanks for sharing this lovely recipe.
     
  3. Beautiful color contrast with the tomatoes, parsley and fish! Loved the ease of the prep in this dish. Made with roasted potatoes and spinach souffle, so everything was done in the oven. Perfection! Delicious flavor with no guilt! I used greek seasoning instead of seasoning salt, but otherwise stuck to the recipe. Thanks for sharing!

  1. Used 1 tablespoon dried parsley. No onion. No oil, as i have minced garlic on hand, used 2 teaspoons of minced garlic. Omitted the tomatoes, and used 2tablespoons of apple juice instead of white wine. It was really good.
