Quick Sunday Bread

"This is a batter bread, and one my mom made often when we were still at home. This bread only has one rising. I have doubled this recipe for 2 loaves with fine results. Leftovers make awesome French Toast the next day!"

  • Dissolve yeast in warm water. Add the cool water, sugar, butter, salt and flour. Mix well. Pour into well-greased loaf pan and let rise in warm place for 1 hour.
  • Bake in preheated 450 degree oven for 15 minutes. Reduce heat to 300 degrees and bake 30 minutes longer.
  • Remove from oven and glaze with melted butter in pan before turning loaf out to cool on rack.

    This was so easy, and such an interesting loaf! It had a lightness of texture that I did not anticipate from a batter bread, but that was certainly welcome. I would almost call it spongy; perfect for soaking up soup broth or butter. Note--I am accustomed to covering dough as it rises and I do NOT recommend doing it with this recipe. I covered this dough and wound up with a very doughy towel LOL. Thanks so much for posting; I know I will be making this again as it is a perfect quick solution for what to serve with warm soup! I am a preschool teacher in Florida, here since marrying my hubby in Sept of '04. I have a stepdaughter. No kiddos of our own unless you count those with fur :-) We have 2 cats and 2 dogs who think they are cats.
