Quick Pickle Salad

"Perfect summer salad, so light and refreshing! My MIL's recipe. Note: use only white sugar, not cane sugar. Also, "cook time" is refrigeration time."

  • Slice cucumbers thinly. Discard end pieces; place sliced cucumbers in large bowl with sealing lid.
  • Slice onion thinly and add to bowl with cucumbers.
  • Combine vinegar, water and sugar in large jar. Shake to combine. (This can be done in two batches if using a smaller jar.).
  • Pour vinegar mixture over cucumbers and onion. Put sealing lid on bowl, shake to combine. Refrigerate overnight or at least 12 hours.
