A very simple kid friendly recipe. Even my pickiest will eat this! I always serve it with a vegetable and noodles.

  • Arrange chicken in a 9x12 baking dish that has been srayed with a non-stick spray.
  • Drizzle with the melted butter.
  • Sprinkle with the baking mix and pour the milk over the top.
  • Combine the soup and the broth and mix well.
  • Spoon the mixture over the chicken. Sprinkle with paprika.
  • Bake at 350 for 45 minutes or until brown and bubbly. Let stand 5 minutes before serving.

    Initially, I thought this was a failure....it looked too liquidy. But it tasted really good, and it does thicken up some as it sits. I put the chicken in the pan and topped with other ingredients as directed, then I used a spoon to push the chicken around a little and let the soup mixture seep into the spaces between. The best parts are the crusty bits around the edge of the pan!

    I followed the recipe "as is" except I used Tyson Grilled and Ready chicken chunks. I wasn't sure if I was supposed to stir all the ingredients together or just leave them layered like the directions said. After a half hour of baking, the broth/soup mixture on top wasn't soaking in, and I was afraid it wasn't going to, so I stirred it all together. The end result did not have a crust on top - it was more of a "stew"?? I served it on top of egg noodles and it tasted really good. I do think it could have used some more spices.

    I thought this was total comfort food. Loved the way the baking mix made the "dumpling" crust on top. Since this bakes for 45 minutes, I did not use precooked chicken. I just cut it up into small chunks and tossed it in the casserole dish raw, then proceeded with the rest of the recipe. Came out perfectly. I used Smart Balance Light in place of the butter, Bisquick Heart Smart baking mix, skim milk, and 98% fat-free cream of chicken soup. I normally add celery and onion to C&D, so will try that next time in this recipe just to see how it turns out.
