  • 1. Preheat oven to 350 degrees F.
  • 2. Brew two chai tea bags in ¼ cup boiling hot water.
  • 3. Place pie crust in a glass pie dish , crimp the edges and place in the freezer for 15 minutes.
  • 4. Put pie crust in dish in the oven for 20 minutes.
  • 5. Remove from the oven and cool.
  • 6. While crust is cooling whisk sugar, eggs, salt cinnamon, ginger and cloves in a bowl, Add pumpkin, cream, coconut milk and chai tea and blend well until very smooth.
  • 7. Pour filling into crust and bake pie for 45 minutes or until a knife can be inserted into the center and come out clean.
  • 8. Remove from oven and cool before serving.

  1. If you want to use this recipe with a 9" deep dish like I prefer for pumpkin pie, cook at 425 for 15 minutes before cooking for 45 at 350. Toss in a bit of flour, too. If you don't, as I learned to my dismay, the center will never set right.<br/><br/>Otherwise, this pie is stupid delicious. I added a bit of extra ground cardamom for an extra chai kick.
     
  2. I completely agree that this is a tastier lighter version of most pumpkin pies. I only steeped two tea bags (not sure why the recipe calls for 3). Also not sure why it calls for 1/2 cup water when only 1/4 cup is used for the tea. Anyways, loved this recipe so much, I will never makes mom's again!

  5. I was present at a party where this pie was served. Everyone wanted second helpings. It was outrageous - very light with delicate taste , not heavy like other pumpkin pies I've tasted. I strongly recommend this be a must on your Thanksgiving Day table. Emily
