"A recipe from the "Exclusively Pumpkin" cookbook that Virginia Bunn lent me. I have to return the cookbook so am recorded recipes to try on recipezaar! I LOVE pumpkin and my family loves hermits!"

  • Preheat oven to 350 degrees.
  • Grease one or two baking sheets.
  • Cream butter and sugar until fluffy.
  • Beat in egg and pumpkin.
  • In a separate bowl combine flour, baking soda, salt, cinnamon, nutmeg and ginger.
  • Add to pumpkin mixture, blending well.
  • Fold in nuts and raisins.
  • Drop batter by teaspoonfuls, 2 inches apart, onto baking sheet.
  • Bake for about 12 minutes.
  • Using a spatula, remove to cake rake to cool.
  • Makes about 6 dozen cookies.

  1. I think these hermits could be my new favorite. I added some Crazins the the batter for color and it was a nice touch. I think that they need a little more spice to help the flavor. I added more ginger after tasting the first cookie and it gave them more pop. Thanks for the recipe!

I have been a member of recipezaar and food.com for years. This is definitely my go-to place for recipes and love that I can have all my individual cookbooks to sort and store recipes. ? I like to experiment when I cook and find that I rarely follow a recipe as it is written. I am also pretty health conscious and try to cook low-fat for regular everyday meals (you can't skimp on the rich stuff for holiday meals & treats!). I also avoid processed foods and use fresh wholesome ingredients whenever possible.
