DIRECTIONS

  • Heat oil in a medium skillet; add onion and carrot. Saute until tender, about 5 minutes.
  • Add prosciutto; saute 5 minutes.
  • Add tomatoes; heat to boiling, stirring and breaking up tomatoes with the spoon.
  • Simmer until sauce is slightly reduced and thickened, about 25 minutes.
  • Season to taste with salt and pepper.
