Prawn & Salmon Tapas

- 10 large prawns
- butter
- 1 breadstick
- 5 lettuce leaves
- 10 slices smoked salmon
- 3 tablespoons mayonnaise
- 1⁄2 teaspoon tomato puree
- 4 -5 dashes Tabasco sauce
- 1⁄2 teaspoon paprika, powder
directions
- Remove the heads and shells from the prawns and pan fry them in butter for 90 seconds each side. Allow to cool.
- Cut the bread stick into slices (10) and lightly toast one side. Butter the toasted side.
- Divide the lettuce leaves between the 10 slices of bread.
- Fold each salmon slice onto the top of the lettuce.
- Mix the mayonnaise, puree and tabasco until the colour is even.
- Add 1 cooked prawn to each tapa and add a teaspoon of sauce.
- Sprinkle the paprika powder over each tapa.
