Potato Soup With Crispy Bacon

  • 4 teaspoons oil
  • 4 slices bacon (chopped)
  • 1 brown onion (chopped)
  • 1 garlic clove (minced)
  • 1 12 kg potatoes (sebagoa starchy potato peeled and chopped)
  • 2 sprigs fresh thyme
  • 2 liters chicken stock
  • 1 12 cups water (375ml)
  • 1 cup cream

directions

  • Heat 2 teaspoons of oil over high heat and add 4 rashers of bacon and cook for 2-3 minutes or until crip and then set aside.
  • Heat another 2 teaspoons of oil in the pan and add chopped brown onion and garlic and cook for 1 minute.
  • Add potatoes, 2 sprigs thyme, chicken stock and water and bring to the boil and then reduce heat and simmer for 15-20 minutes.
  • Blend until smooth and stir through cream.
  • Divide into serving bowls and top with crispy bacon to serve.

A very quick and easy soup to make.<br/>I followed the recipe exactly and it was lovely and creamy, I liked it as did DD but the rest of the family thought it needed something more added. <br/>DD and I did thoroughly enjoy this thanks Pat and seved on a cold winter's day it was really warming.

With the demise of the forums and with no more interaction on site with what was a great community and it was a pleasure to get to know so many of you over the years and to have had the privilege of meeting some of you in person. For me now this is just another recipe site like to many on the net, it has lost its specialness, such a pity especially when Scripps changed the name from Recipezaar to Food.com and made this statement sorry cannot replicate here as considered invalid but they basically said yes the community was valuable hence .com was short for community but it was a pack of lies as they were not willing to put the money into that community and got rid of the forums which was the community so for .com has become .crap.
