Potato Carrot Burger With Spiced Mayo

BURGER
- 1⁄2 cup of cooked carrot
- 1⁄4 cup of cooked potato, peeled
- 1⁄2 of a small onion, finely chopped
- 1 egg
- 1 tablespoon mayonnaise (if burgers are not binding well)
- 1⁄4 cup breadcrumbs
- 1⁄4 cup flour (if needed)
- breadcrumbs (for dredging)

MAYO
- 2 tablespoons mayonnaise
- 2 tablespoons ketchup
-
ASSEMBLY
- 2 hamburger buns or 2 pita breads
- 2 leaves lettuce
- 2 slices provolone cheese (or other favorite cheese)
directions
- Mash together all burger ingredients EXCEPT crumbs for dredging.
- Form into 2 burgers.
- Coat burgers in bread crumbs.
- Fry in a frying pan on med high heat in cooking sprayed pan until lightly browned.
- Serve on buns with lettuce and cheese with spiced mayo.
- Pop in toaster oven to melt cheese if you please.
- MAYO: Combine all ingredients.

Here's a nice, very tasty alternative to the usual burger, or even the usual veggie burger! I used some lemon pepper & garlic salt for seasoning a bit more, but other than than I followed your recipe! Very happy with the results, & I'll be making this again! Thanks for posting! Wow powee Batman! This is a wonderful treat! I love a veggie burger anything, and this was a nice change from the usual burger. The potatoes and carrots molded nicely together held together delicately by the onion. I used Ener-G egg replacer, and added a bit of very, very, very, hot sauce. I had no trouble with this sticking together, I guess because of the addition onion. I loved the breadcrumb outside, and all of it. Anme, you have a different, delightful veggie burger going on here, and can be made vegan so easily just by replacing the mayo with vegan mayonnaise. I did however, add more hot sauce to the sauce, and made a "Big Mac" sorta of with the bread/lettuce/and sauce. Oh yummy, will make these again, and probably just start eating them regularly. Thank you so much, we loved this!

I'm just a girl whos passion is for cooking, well some people would call it an obbsession rather.... I am a college student at RIT going for food management and prep, my favortie things! Most of my orignal recipes are made from left overs since I cook for one or two most days so there are always left overs in my house.
