Posole (Crockpot)

"This is too easy--an emergency meal -- keep pork (better thawed, if frozen need to add extra time for cooking) and posole in freezer and put in the crockpot and then dinner is done when the game is over -- just add seasoning and dinner is done! Can't get any easier than this! Adapted from local newspaper"

  1. LOVED IT! I can't wait to make this again, it tastes just like tamales, and the seasoning is perfect. I was amazed that the flavor was so good with so few ingredients. I couldn't find frozen pozole, so I bought canned Mexican white hominy. I cut the water in half and made it on top of the stove, cooking for about 3 1/2 hours. Absolutely delicious, thanks for a definite keeper Ellie!

<p>I love cooking and trying different foods, but my favorite cookbooks are now Weight Watchers or low fat/low cal cookbooks as I tend to try and make low fat/low cal recipes. I lost over 90 pounds on Weight Watchers and have maintained for over a year now -- so my cooking/eating habits have changed drastically following my weight loss and to keep it off!</p>
