Portuguese Sweet Bread - Pao Doce

  • Dissolve yeast in warm water in a large bowl.
  • Stir in milk, 3/4 cup sugar, 3 eggs, salt, margarine or butter, and 3 cups of flour.
  • Beat until smooth.
  • Stir in enough of the remaining flour to make the dough easy to handle.
  • Knead dough on a lightly floured surface until smooth and elastic - about 5 minutes.
  • Place in a greased bowl and let rise in a warm place until it is double in size - about 1 to 1 1/2 hours.
  • Punch down dough and divide in half.
  • Shape each half into a round slightly flat loaf.
  • Place each loaf into a well greased round 9" x 1 1/2" pan.
  • Cover and let rise until double (a/b an hour).
  • Heat oven to 350°F.
  • Beat 1 egg and brush over tops of loaves.
  • Sprinkle with 1 teaspoon of sugar.
  • Bake until loaves are golden brown, about 35-45 minutes.

  1. Mine look, and smell wonderful and are tasty. But they’re not as light and fluffy as my grandmother’s. They are quite dense. Is this recipe intended to be a dense bread? Thoughts??

  3. After I have need how long should I let them rest to rise
     
  4. Can you use instant yeast instead of active dry?
     
  5. If you make small individual sweetbreads would you need special pans to make them?

  2. Good Heavenly Father God Almighty this was very very good. My husband ate half the “tray” of buns in a few minutes... oops. Made 1 batch of buns and 1 loaf with this recipe and both turned out beautifully. I used Instant yeast; only 4 tsp instead of rx’ed 6 tsp (2 tbsp) as I found a conversion online saying to reduce volume of instant yeast by 1/3rd when substituting. ???? Highly recommend!

  5. I added honey, an extra egg and extra flour to offset the added liquid. It came out great and is now my most requested homemade bread. I made garlic butter and herbed butter spreads also

Tweaks

  1. Used golden caster sugar in bread, and brushed top with honey, sprinkled brown sugar over top rather than an egg wash

My ratings go something like this: 5 stars: Very good, I will definitely make this again. 4 stars: Liked it quite a bit and will make it again but there was either something I had to change or I will only make now and then in the future.
