ingredients
- 3 large tomatoes
- tomato sauce or puree seasoned with salt, pepper and garlic
- salt and pepper
- oil
- 6 hard-boiled eggs
directions
- Cut the tomatoes crosswise in half and remove the pulp.
- Season lightly with salt and pepper, and cook in hot oil for a few minutes.
- Place a freshly shelled egg in each tomato half and pour over them a little thick tomato sauce or puree.

This was an interesting change for breakfast. The tomato goes really well with the egg and spices. I used a cold egg, but it would have been much better with a warm one. I just couldn't toss the pulp out, so I set it aside, and then warmed it in the skillet with the spices to spoon over the top instead of using canned tomato sauce. For ZWT8 om-nom-nommers :-)
