I found a recipe on line that we like but always felt it needed "something". After multiple attempts, I finally figured it out. This is a very satisfying meal, hearty yet light. Full of flavors. Add your favorite spices or vegetables. If you make this and plan on having leftovers, reserve 2 cups of bok choy. Stir fry or saute the bok choy then add to the reheated bowl mixture. That way you will have the lovely crisp fresh bok choy which really elevates this dish!
