As a vegetarian I cannot taste or tell when tender so just about how long do you simmer?

I used 1 1/4 cup of reduced salt soy, 2 cups of water, I added 1 tablespoon of brown sugar, the juice of 2 lemons, and I also added ground ginger when I seasoned the pork before browning. The tweaks were perfect for 16 small thin cuts of boneless pork-no leftovers!

I am rating this without stars as my pork turned out very dry. I did use a lean cut, boneless with a bit of fat around the edges so that may have been the problem. I used low sodium soy sauce and I thought the taste was quite good. If I make this again, I will use a different cut or pork, possibly with the bone in it and a bit more fat. Thx for sharing.
