"This is a great recipe to serve in the warmer months. No cooking over the stove required. I enjoyed this recipe at my sister-in-laws home quite a few times many years ago. It is a great dish to serve to a large number of people. It is easy, other than the chopping, etc. The quantities vary, depending on the likes or dislikes of guests. I think you will enjoy it."

  • 1 rotisserie-cooked chicken
  • 2 (3 7/8 ounce) boxes chicken rice-a-roni
  • 1 cup chopped onion
  • 1 cup shredded coconut
  • 1 (12 ounce) can crushed pineapple
  • 1 - 1 12 cup slivered almonds
  • crunchy chinese noodles
  • 1 - 1 12 cup finely shredded cheese
  • 2 (14 ounce) cans chicken broth (heated)

directions

  • Shred chicken. Set out dishes containing above ingredients. Beginning with the rice, let guests begin stacking up ingredients. Rice, chicken, etc. Cover with chicken broth.
