Polish Cabbage Casserole

"This is a quick & easy way of using up the leftover cabbage from recipe #50949 my Easy Cabbage Rolls. For a more economical meal, use bone-in chicken pieces but cook a little longer. Serve with steamed rice and/or crusty bread to mop up the sauce."

  • Combine all ingredients in a heavy Dutch oven.
  • Bring to a boil over high heat.
  • Reduce heat and simmer for about an hour, stirring occasionally.

  1. Just shows that simple can be very good. I used chicken and served with bread as you suggested. I used 1/2 tablespoon hot smoked paprika powder and half normal. From what was left I made soup the next day, by adding some stock and cooked macaroni.
     
  2. YUMMMMY! I sauteed an onion and garlic firstly and added in some red pepper flakes for heat, also a can of undiluted tomato soup. Will serve it with rice. Thanks Marg!
     
  3. This casserole amazed me, it was excellent. Hardly any ingredients yet such a flavourful, inexpensive dish. I used german sausage and hungarian sweet paprika, simmered with the lid on for about 2 hours. Served with crusty bread for a tasty, warming dinner on a cold winters night. Thanks CountryLady for family keeper.
     
  4. Yum! I added onion and celery and used boneless chicken thighs. This was easy and delicious. I will be making it again.

In the words of Tracy Byrd, "I'm from the country & I like it that way"!! On May 1, 2008 my husband and I started a new adventure. We'll be living in a 37 foot RV while our new home is under construction. Its out in the country on a dead end dirt road with lots of trees. For the next 4 months or so, most meals will be cooked on the BBQ and life will be full of challenges! We love spending quality time with our friends & family - especially the grandkids!! The photo is 4 generations - my 84 year old mother, myself, my daughter & my youngest granddaughter - taken at the end of 2006. I've participated in many contests & events here on Zaar but this is the first banner that I've posted.
