  • Mix eggs, 3/4 cup pizza sauce, crumbs, parmesan, half the mozzarella, onion, green pepper, salt, oregano, and pepper.
  • Add beef; mix well.
  • Pat into a greased 8x8 baking pan.
  • Bake at 350* for 50 minutes.
  • Drain.
  • Spread remaining pizza sauce on top, bake another 10 minutes.
  • Sprinkle with remaining mozzarella, bake until bubbly.

At first I was a little hesitant because it just didnt sound good, but I should have known that any recipe posted by Inez would be great, made it today......it was really good, a nice change, wasnt as pizza like as I thought but really made the meat loaf "zippier" Thanks again for another great recipe Inez....

  4. Another winner, Inez! A straight-forward recipe with a great taste. We had grandkids over and they took seconds so that says a lot. Just to have a little fun, I used Cajun seasoning for the seasoning salt. VERY pleased with the results. The loaf held together very well and sliced up nicely for sandwiches. Thanks.

Tweaks

  1. I used regular salt, shredded parm and added a teaspoon of garlic powder, about a dozen slices of pepperoni cut into quarters and instead of crackers I used homemade french bread that I cubed, toasted and ground up in the food processor.
     
  2. This was a good meatloaf. I followed the recipe as written other then I used shredded parmesan cheese and used the whole 1/2 cup of mozzarella cheese in the meatloaf. I didn't add the green pepper and used a teaspoon of italian seasoning instead of the oregano. I topped with even more pizza sauce then what was left of the 8 ounces. I then used about another 1/2 cup of mozzarella to top. This was good when made but we thought it was even better the next day. We too thought it would have more of a pizza taste to eat but it was enjoyed just the same. Next time I may try adding a bit more seasoning.

After DH and I moved away from the farm, and to the city...I haven't done as much cooking and very little canning. But I do come to Zaar and look for new recipes once in a while. I'm still cooking Zaar!! I like to play at Facebook, with my family and friends. A lot of my Zaar friends are there!! Yay! It's a good way to keep in touch. We travel more. We're looking at the European trips now. Hope to go in the springtime. I really want to see London, I think I lived there in a past life, I've been obsessed with it since I was 10 years old!!
