Pineapple Vanilla Infused Tequila

ingredients
- 1 pineapple, large
- 1⁄4 cup brown sugar
- 3 1⁄2 cups white tequila
- 1 vanilla bean
directions
- Peel, core and cut the pineapple into chucks.
- Premix the tequila and sugar until dissolved.
- Split the bean pod in half. Place with pineapple in a 3-1/2 pint airtight jar or bottle and store in a dark place for at least a week.
- Make sure to strain fruit after two weeks and store in an appropriate liquor bottle.

I am on week one and taste tested my infusion. So far it's pretty good and I know it's going to get better. My question is after straining, what is the shelf-life, in or out of the fridge? I don't expect it to last long in my household of tequila drinkers but I would like to know just incase....Also do you think I should strain it sooner because I live in a constant warm climate?
