Pineapple Snack Cake

No frosting, no fuss. You can have a really delicious dessert in about 45 minutes. This is a tried and true Southern Living recipe.

  • Preheat oven to 350.
  • Drain pineapple, reserving 1/3 cup juice.
  • Set aside.
  • Combine flour and next 3 ingredients; make a well in the center.
  • Combine the reserved juice, milk and next 3 ingredients.
  • Add wet to dry ingredients, stirring just until moistened.
  • Spoon into a greased 9' square pan.
  • Top with pineapple and then sprinkle with brown sugar.
  • Bake for 25- 30 minutes.
  • Cool in pan on wire rack for 10 minutes.

    Made this last night. Only tweaks for me would be extra pineapple for topping, and a little less sugar in the cake. Nice and moist and just the right size for little ol' me.

    Tasty snack cake. Not too sweet, dense cake. Was best while still a little warm. Doubled the recipe for a 13x9 pan. Next time, I'd double but use a 20 oz can pineapple and a few handfuls more brown sugar. Thanks for sharing the recipe!

    This cake is exactly as the title states - a snack cake. It's just a simple cake that goes great with a cup of tea/coffee. I made it for a morning meeting and thought it really fit the bill. Not an overly sweet and rich cake - but very moist and enjoyable. The topping is light and perfect. Thanks for sharing this little gem, it's a keeper.
