This is the recipe I have been searching for since I was a child. My mother did not even remember having made it after I was born, but she must have because always when I thought of rice pudding, I had this flavor in my memory, but when I bought or made it, it was never what I remembered because it was missing the pineapple. The second time I made it, I accidently turned my whipped cream into butter, and all I had on hand was coconut milk so I mixed that in and it was great especially the next day! Note: It was a double recipe, so I used a whole can of coconut milk, dont know how much to use for a single recipe.
