  • Combine rice, sugar, salt and vanilla.
  • Add pineapple; chill 1 hour.
  • Add marshmallows and fold in whipped cream.
  • Chill until serving time.

  1. Unless you have an incredible sweet tooth, I would recommend starting with 1/4 of a cup of sugar and working your way up. I started with 1/2 a cup and ended up throwing it in the garbage. Could just be my own personal taste, i'm not saying it might not be delicious for others.
     
  2. This is the recipe I have been searching for since I was a child. My mother did not even remember having made it after I was born, but she must have because always when I thought of rice pudding, I had this flavor in my memory, but when I bought or made it, it was never what I remembered because it was missing the pineapple. The second time I made it, I accidently turned my whipped cream into butter, and all I had on hand was coconut milk so I mixed that in and it was great especially the next day! Note: It was a double recipe, so I used a whole can of coconut milk, dont know how much to use for a single recipe.
