  1. Lets just say, I don't like coleslaw. But this was a surprisingly refreshing dish. I recently came into a ton of red and green cabbage, pineapple, plus some jicama and was looking for something to put all in, and this recipe totally hit the spot. I used Apple Cider Vinegar, in lieu plain vinegar, that complimented the thinly slice apple pieces. The jicama added to the crunchiness and juiciness. Like others, I chose to cut my pineapple up, which really gave the dish a tangy sweetness. A day later and the flavors have blended even more, but the refreshing crunchiness remains. I think I might add some Chinese pear to it tomorrow. This recipe can easily be a side for an 8-10 person dinner party.

  2. This was a nice salad to accompany a Caribbean themed dinner. I used fresh pineapple so I also cut my pineapple up and mixed it in with everything else. I think if I make this in the future I might add a couple of extras, like pepper and maybe cilantro. Made for ZWT5.

  4. This pineapple cole slaw is so easy to make and is so crunchy and flavorful. I really liked the taste and texture that the apple and green peppers added to this salad. I think next time I make this slaw, I will make my apple and pepper pieces a little bigger to give the slaw even more of a crunch. I also added a few diced pineapple pieces to the slaw and used an apple cider vinegar. Very good slaw. Thanks for posting your recipe. Made for ZWT5.
