Pineapple Cheese Logs

ingredients
- 2 (8 ounce) packages cream cheese, softened
- 1 (8 ounce) can crushed pineapple, drained
- 2 cups finely chopped pecans, divided
- 2 tablespoons finely chopped green onions
- 2 teaspoons seasoning salt
directions
- Set aside 1 cup of the pecans to roll the logs inches.
- Mix remaining ingredients (I use a mixer).
- Refrigerate for several hours.
- Divide cheese mixture in half, and roll each half into a log (or make 1 huge log).
- Roll each log in reserved pecans, wrap in plastic wrap, and refrigerate until serving time.
- Unwrap, place on platter, and serve with crackers.

I have twin daughters who are in their second year of college and a son who is 16. My girls' college is close enough that I can come by every couple of weeks or so. When I tell them I'm coming, they ask Are you bearing baked goods?. Usually, I am, to the excitement of their suitemates!
