Pineapple Boiled Fruit Cake

ingredients
- 500 g mixed dried fruit
- 1 cup brown sugar
- 155 g butter
- 1 (450 g) can crushed pineapple
- 2 eggs
- 1 cup plain flour
- 1 1⁄2 cups self raising flour
- 1 teaspoon mixed spice
- 1 teaspoon bicarbonate of soda
directions
- Place mixed fruit, sugar, butter and pineapple including juice into a saucepan.
- Simmer for 5 minutes.
- Allow to cool.
- Beat eggs slightly and stir into fruit mixture.
- Sift together the flours, spice and bircarbonate of soda.
- Fold into fruit mixture.
- Place mixture into a greased and lined 30cm cake tin.
- Bake in a moderate oven for 90 minutes.
- Test after 90 minutes.

I made this recipe yesterday and we had our first piece after lunch today. I followed all steps to the letter and I'm afraid this cake is way too dry. Since I'm no expert at fixing recipes, only following them, I don't know what you need to moisten it up, but please try. The flavour is good and the portions too. Sorry
