DIRECTIONS

  • Drain sliced beets and cut into half pieces Set aside.
  • In a medium saucepan combine sugar, cornstarch and salt. Stir in pineapple and juice. Cook on low heat, stirring constantly until mixture thickens and bubbles.
  • Add butter, lemon juice and beets. Cook an additional 5 minutes until heated through.
  • Serve and enjoy!
