Pickled Lemons

- 3 lemons
- 1⁄2 cup kosher salt
- 1⁄2 - 1 cup fresh lemon juice
- 1 teaspoon extra virgin olive oil (otional)
directions
- Scrub lemons and dry well. Cut each lemon into 8 wedges and each wedge in half.
- Place lemons in a bowl with the salt and mix well.
- Put lemons in a glass jar with a non metal lid. Add juice to cover, add olive oil if using. Leave at room temperature for 5 days shaking the jar from time to time to mix the juice. After 5 days store in the refriderator.

<p>I will start by saying that I love to cook and also love collecting recipes so I am very happy to have joined Recipezaar and really enjoy going through all the recipes that have been generously posted by other members. <br /> <br />I only cook for myself during the week but on weekends I usually have 2 meals to prepare for family and friends. I am on WW and try to keep my choices in line with WW but will indulge myself and save a few recipes that don't fit in with WW for special occasions. My favourite food is curry and am always on the look out for a new curry <br />recipe. <br /> <br />I love to garden as my Zaar name would indicate, I grow tomotoes and herbs but space is limited so mostly I have perennial and annual flowers and plants. <br /> <br />My baby is a lovely little ShihTzu X Poodle named Rosie, she is my only child so of course is spoiled rotten.
