Pickled Eggs 101 =)

"Easy to make and keeps for weeks in the fridge. I like to give the peppercorns a bit of a whack to help release their peppery goodness. I sometimes make these in quart jars and give away for "guy gifts"... as in ..."Playing poker tonight, sweetums?? Here, take this jar with you to give to Harold." ( Woo Hoo! ... a quiet night alone...Thank you, Harold!!!!)"

  • Tap a tiny air hole into the large end of each egg with a needle, sharp knife or egg piercer.
  • Put eggs in a pan and fill with cold water.
  • Bring to a boil, turn heat to low and simmer for 12 minutes. ( over cooking will cause that harmless but unattractive dark green ring around the yolk).
  • Drain water from eggs and immediately replace with ice cold water. ( I keep the water running until eggs are cooled completely).
  • Crack the egg shells against the side of the pan and keep eggs immersed in cold water while you are in the peeling process.
  • Peel shells from eggs and return eggs to cold water until all are finished.
  • Remove eggs from water and rinse thoroughly to remove any bits of shell.
  • Place first seven ingredients in a 2+ quart container.
  • Add eggs and place covered container in the refrigerator for 8+ days for flavors to "set".

  1. Just ate one of the eggs that I made from your recipe. Always boil my eggs the way you describe in your recipe; (we have chickens, and fresh eggs need that 'trick' to peal perfectly). This recipe is perfectly totally yummy! Not sweet or 'pink'. Just gentle mellow flavor and no gassy egg smell, or haunting from the tummy...:) I know the men in the family will really enjoy these. Thank you very much for sharing your recipe!
     
  2. Yep, these are delicious. I love the flavour of them. I never had a problem peeling my eggs the way I have been doing them , so I still cooked them my way but used this recipe . I really enjoy them, had to stop myself with just one though. Thanks for posting the recipe.

Zaar...Wow, what a place! I'm one of the old timers of Zaar. I can't count the number of wonderful dishes I cooked in the past few years since joining. Along the way I have had the pleasure of meeting several Zaar chefs. Talk about your fruits and nuts! lol. I have enjoyed meeting them all. Family: What's to say...I have had the same sweet husband forever (Good thing....I'd hate to have to break a new one in...=) and live close to a couple of grown children. (Maybe you've met Smoke Alarm Jr. ..her brown rolls are sooo good!) Therefore, my family gets together often to enjoy each other's company and cooking. My greatest joy is six "little to tallerthanme" kids running around calling me Grammy. They wear me out! lol For the past thirty years I have been a Special Education teacher for grades 9-12 and love it. Took some time off last year to recovery from surgery, chemotherapy and radiation for breast cancer. (Loved the radiation....I keep imagining that we are absolutely napalming the nasty cancer cells tohellandback to keep the little suckers from returning. =) My prognosis is good and now "I'm back in the saddle again". lol. Being a north country "gurl", I am happiest outside...walking, fishing, sitting in front of an outdoor fire or being on water (although in February it's a bit stiff....=0) When indoors I like to read, garden, knit, quilt and paint. During cold Maine weather I like to warm my feet on a very large ( 100 pounds of long legs and huge feet), sweet and furry golden retriever named Kerry (aka KTBRD: Kerry the big red dawg..lol) . In the summer, the dawg and I round up the grandkids, hit the local dairy bar for a Mounds Sundae that is to die for!!!=0) . Then spend a lot of long and lazy summer days at camp . All in all...Boy, Life is good! =)
