Pick-And-Mix Salad

ingredients

SOFT
- 1 round lettuce
- oakleaf lettuce
- lamb's lettuce
- watercress
-
CRUNCHY
- 1 cos lettuce
- little gem lettuce
- chicory lettuce
- radicchio
-
HERBY
- 4 tablespoons of fresh mint
- fresh basil
- fresh flat leaf parsley
- fresh rocket
-
VEG
- 1 cucumber
- tomatoes
- carrot
- celery
-
CHEESE
- 1⁄4 cup parmesan cheese
- mozzarella cheese
- feta
- creamy blue cheese
-
TOPPINGS
- 2 tablespoons mixed seeds, toasted
- pine nuts, toasted
- rustic crouton
- pappadams, crumbled
directions
- Choose an ingredient from each of the 6 groups above.
- Wash and spin dry the soft and crunchy leaves.
- Pick the herby leaves off their stalks.
- Finely slice or peel the veg and shave, tear or crumble up the cheese.
- Toss everything together in a large bowl.
- Dress simply with your choice of dressing, and season with a pinch of salt and freshly ground black pepper if needed.
- Divide the salad between your serving bowls and sprinkle over your chosen topping.

Simple and wonderful method for salad making. I used: Romaine lettuce (cos), a bit of watercress, fresh basil, 1/2 a cucumber, tomato (I used 2 from the veg. category), parmesan cheese and pine nuts. I topped it all off with a light vinaigrette. Just a light sprinkle of kosher salt and freshly grated black pepper was a nice addition. Yummy, easy and healthy salad!!

Well..about me! I'm married, I have 2 kids (both boys), and I live in Australia.
I have loved cooking for as long as I can remember, and have become completely addicted to browsing through Zaar looking for new recipes!
I have a small animal shelter for rabbits and guinea pigs, and spend most of my time looking after kids or critters!.
My favourite cookbooks are The Essential Pasta Cookbook, The Central Cookery Book, Flo Bjielkie-Peterson's Country Cookbook, and Greek Cooking (I bought that one in Greece, and it's FANTASTIC). At the minute, we are getting ready to move, which is forcing me to sort through my recipe cabinet. I have been trying out all those recipes that are scribbled on pieces of paper, or torn from magazines, so I can decide ifthey are keepers or not. So far I've found a lot of keepers, and will work at posting them on here.
I'm passionate about a lot of things, mainly my kids, animals, and cooking.
I won't even start on my peeves, we'll be here all night! lol
