  • Preheat oven to 300 degrees F (150 degrees C).
  • Bring a large pot of salted water to a boil.
  • Add potatoes and cook until tender but still firm, about 15 minutes.
  • Drain and mash.
  • In a large mixing bowl combine mashed potatoes, cream cheese, onion, eggs, flour, salt and pepper.
  • Using an electric mixer, beat on medium speed for several minutes.
  • Spoon mixture into a 1 1/2 quart casserole dish and top with crushed fried onions.
  • Bake in preheated oven for 30 to 35 minutes.

  1. Our family loved this. I'm leaving the stars blank though because I used instant mashed potatoes and then stirred everything into that. It made it so easy! I also added some chopped parsley with the french fried onions.
     
  2. These are good, but like another reviewer noted, perhaps needs a bit more salt. Very creamy--not quite like traditional mashed potatoes.
     
  3. Delish! I did add more salt than the recipe called for, about 1.5 tsp. to be exact. Also, I wasn't sure how many potatoes to use since, as of this writing, the recipe does not specify quantity. I ended up using six smallish russets and that worked out just fine. We were very pleased with this dish and would recommend it to others. Thanks for sharing!

I am lucky enough to be "living the good life". I have the most wonderful husband and two terrific teenage daughters. We reside in Central Pennsylvania where we have the luck of having four full seasons. Between my husband and myself, we have two full time jobs, three businesses and one part time job. We are very busy, but try to take it easy when we can and enjoy the wonderful life we have been blessed with. Future plans include moving to an inherited 45 acre farm in a beautiful valley surrounded by mountains. This will occur if and when our DD's leave the nest. We love to travel and have enjoyed seeing all of North America and a large portion of the United States together. Since discovering Zaar, I have to say my life has become more flavorful! I have learned that it's easier than I thought to have an organized, well-planned and yet creative and fun kitchen! I love the features of Zaar, but especially enjoy the people. I have become addicted to the forums and now love taking photos of the food I prepare. I am officially a Zaar junky!
