Perfect Rice Everytime

I adopted this recipe. Here is the original poster's description: This will yield perfect rice. You can , of course add other things to your rice if you wish. Dried cranberries or raisins work well.

ingredients
- 1⁄2 cup minced shallots or 1/2 cup onion
- 2 tablespoons butter
- 1 cup uncooked rice (long grain white, basmati or jasmine)
- 1 (15 ounce) can chicken broth or (15 ounce) can chicken stock
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon black pepper
directions
- Preheat oven to 400 degrees.
- Use a saute pan with straight sides with a tight fitting lid.
- Saute onion or shallot in butter until soft, Add uncooked rice and saute, stirring for 3 - 4 minutes.
- Add chicken broth, salt and pepper.
- Bring to a boil, cover and put into oven for 16 minutes.
- Remove from oven and let sit covered for 10 minutes.
- Remove lid, fluff with a fork and serve.
- Note recipe can be doubled.

I've come back today to hunt this recipe down so I can use it again tonight :) I made this a couple of weeks ago, and although there was a couple of points along the way I thought this wasn't going to work out for me, it came out brilliantly. I had loads leftover as well since there was only 2 of us and I forgot to half the recipe. The leftovers were equally nice next night as well though. Thank you for this recipe, it's a keeper :)Reply

I'm embarrassed to admit that this recipe introduced me to rice. I thought all rice was like the mushy, tomato-y rice we had for school lunches, but this dish opened a whole new world for me! I found it to be very good & easy. I wonder if some would find it too peppery, but not me! I've been craving it ever since I first made it! I used basmati rice and followed the recipe just as directed. Excellent!Reply
