Perfect Perogy Casserole

ingredients
- 16 -20 pierogies
- 1 onion, chopped
- 1⁄4 cup milk
- 1 tablespoon butter or 1 tablespoon margarine
- 1⁄2 cup cooked ham, diced
- 1 green pepper, diced
- 1⁄4 cup cheddar cheese, shredded
- 1 (284 ml) can condensed mushroom soup
directions
- In a small skillet melt butter or margarine and saute onion and green pepper for 5 minutes.
- In a medium size casserole dish, combine frozen perogies, onion, green pepper and ham.
- Combine milk and mushroom soup and pour over casserole.
- Top with cheddar cheesse.
- Bake 35 minutes at 175C (350F) or microwave until heated through.

I had kielbasa to use up and a big bag of potato and cheese pierogies in the freezer, so I thought I'd give this a try. I made it as directed, but had to use low fat cream of chicken soup instead of cream of mushroom. I also use light kielbasa and light cheddar cheese as a rule. This was tasty and easy. DH suggested next time I try cheddar cheese soup instead for a cheesier casserole. Thanks for sharing!
