DIRECTIONS

  • Prepare beans by rinsing them and cutting off stems.
  • Boil water and add salt.
  • Prepare a large bowl with very cold water and ice.
  • Add beans to boiling water and stir frequently.
  • Cook beans approximately 6-10 minutes. I babysit mine to achieve the perfect balance between cooked and still crunchy.
  • Remove beans and immediately place in ice water to blanche.
  • Warm sauté pan over medium heat with olive oil and minced garlic.
  • Add onions and mushrooms and cook approximately 2-3 minutes.
  • Remove beans from ice water, pat dry and add to sauté pan. Stir frequently to coat the beans in the oil and garlic and to mix mushroom and onion.
  • Add pepper to taste and additional salt if desired.
  • Saute' beans for approximately 5 mins or until warm.
  • Serve immediately.
