12 pepperoni rolls

  • Dissolve sugar, yeast, salt in the warm water.
  • Stir in the flour, using extra flour or water as needed to make a soft dough that isn't too sticky.
  • Turn out onto a floured board and knead for a couple of minutes. Shape into a ball and let raise in a bowl for 30 minutes to an hour, covered with a towel. Volume should double.
  • Turn the raised dough back onto the floured board, and cut it into 12 pieces (I use a scraper/cutter, but a knife works fine.).
  • Take each piece, flatten it lightly on the board with your hand, and place 4-5 slices of pepperoni in the middle, overlapping but not stacked.
  • Add cheese.
  • Roll it up like a jelly roll, and then crimp it with your fingers to seal the ends into an oval, with no pepperoni sticking out. Place on an ungreased baking sheet with at least an inch between each one.
  • Beat in an egg and add a tablespoonful of water. Brush rolls lightly with this glaze. You don't need to let the rolls raise further, but you can if you want to.
  • Bake rolls at 425 degrees until golden brown.

Made these today. Dough recipe is spot on! We cooked ours for about 15 minutes and they were just perfect! We used different cheeses to try different things... Monterrey jack was our favorite with mozzarella being our second. Mexican blend cheese was also good. One thing we did think we messed up on is that we didn't use enough cheese! Just like the recipe says, if you think about a jelly roll, I think using multiple lines of pepperoni and cheese would be great. We did about 2 rows of pepperoni which was good, but we should have been more liberal with our cheese to get them closer to DD style. Everything was still great and much better than our failed attempt 10 years ago in using frozen roll dough. If you have a bread machine, I used ours and put the ingredients in the following order - 1. water, sugar, salt - 2. flour, 3. yeast. Our bread machine instructions said never to put the yeast in contact with the wet. It worked out great. It might be different for your bread machine but our dough setting worked great. Thank you for this great recipe! Next time I think we will use lunch meat style sliced cheese. I think we were way too light on the shredded cheese. Still awesome and I will definitely recommend!

Perfect recipe! I bought all of my ingredients at Aldi! I used “Roasted Garlic and Herb Finishing Butter” on top of my rolls. My friends will enjoy these for our Super Bowl party!

Excellent recipe. I have made these several times now (my husband requests them weekly to take in his work lunch), and they come out perfectly every time. I usually double the recipe. Great recipe as it is, but I recently used half mozzarella cheese and half pepper jack, and we loved the extra kick it gave the rolls. I also added some Italian seasoning to the tops of the rolls after the egg wash. This is my go to pepperoni roll recipe!

These were excellent. I doubled the recipe and used bread flour. I mixed and needed it in my Kitchen Aide and then only kneaded it by hand for less than a minute. It raised up perfectly and was delicious. This was so much faster and easier than I could have imagined! Thank you!
