Penne With Chicken Mango Sausage and Spinach

- 16 ounces penne pasta
- 14 ounces chicken sausage (I use Trader Joe's Mango Chicken Sausage)
- 6 ounces Baby Spinach
- 1 tablespoon extra virgin olive oil
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon ginger powder
- salt and pepper
directions
- Boil pasta per package directions.
- While pasta is boiling, heat oil in very large skillet over medium heat.
- Chop sausage into bite-size pieces. Add to skillet. Stir.
- Add onion powder, garlic powder, ginger powder, salt and pepper. (ALL AMOUNTS FOR SPICES ARE APPROXIMATE -- I just gave a few shakes of each until it smelled good. For the record, I would have used fresh onion, garlic, and ginger if I'd had any!).
- Cook until sausage is heated through.
- Add bag of spinach. (Next time, I may use 2 bags, but this is what I had in the fridge.).
- Stir to combine flavors well. Put lid on pan if desired to speed up cooking time. Cook until spinach is wilted.
- Drain pasta when ready and add to skillet. Stir to combine flavors.
- Serve and enjoy!

Disclaimer, I used this as a jumping off point and never made the recipe as written. That said, what I made with the inspiration was delicious! Much to my great surprise, everyone loved it. I can't tell you how rare that is in my family. lol. So, as much as I hate reviews where the reviewer has modified the recipe beyond recognition, I'm going to post this because it really was that good. I used fresh onions & garlic, and ginger paste. I didn't have fresh spinach, so I used a bag of frozen chopped spinach. Plus, I added sweet peppers and carrots that I had left over from a party veggie tray. It was a bit spicy for my crowd, so I also tossed in about a quarter of a container of cream cheese (again, a party leftover). You can't beat carrots and ginger, and the cream cheese added just a tiny touch of sweetness without being very noticeable (it was a very small amount - not enough to make it "creamy".)

I was looking for a creative way to use some mango sausage and found this great recipe! My kids and hubby loved it! I added more olive oil, a little water, the juice of one lemon (I should have added the zest, too), some chili powder, and a little honey. Then, we topped it with a little grated gruyere. Yum!
