ingredients
- 2 cups elbow macaroni
- 1 tablespoon butter
- 1 green pepper, chopped
- 1 onion, chopped
- 2 (15 ounce) cans Hormel chili without beans
- 1 (12 ounce) can corn, drained
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 cup fat-free cheddar cheese, shredded
directions
- Prepare macaroni, drain.
- In large skillet, melt butter. Add green pepper, and onion and cook until tender.
- Add chili, corn, and seasonings.
- Simmer on low heat 5 minutes.
- Stir in macaroni and top with cheese. Cover and heat on low 5 minutes.

I made this as a quick dinner that would please my kiddos and it worked out perfectly! It was like an extremely savory version of Hamburger Helper. I did add some chicken that I needed to use up, but I think it would have been just as good without it. Second, I did not have shredded cheddar, so I melted a few slices of cheddar on top before serving. Finally, I only had one can of chili on hand so I used 2 cups of cooked macaroni and I really don't think I would add more the next time I make this. It was great. I also followed the advice of the last reviewer and added some chili powder. Delish! My kids gobbled it up pretty quickly and my 2-year-old had a second bowl. It got rave reviews across the board, even though this is not the typical food that I make at my house.

Thank-you for sharing this easy to prepare recipe. I did add about a tablespoon of brown sugar - enough so you can't taste it, but it does cut the 'edge' off the Hormel chili taste. Also added a good sprinkle of chili powder and a pinch of cajun seasoning. I didn't have any cheddar cheese on hand, but I did top this off with American cheese slices - and once these melted...... oooo it was so good.
