  • For the Ice Ring:

  • In a large pot, Warm 12 sage leaves, lime zest, and water in medium pan for 10 minutes on low. Chill in fridge until very cold. Strain through a large mesh strainer permitting a small amount of zest and sage to travel through for visual in the ice.
  • Decorate bottom of ice mold with sage leaves and pear slices. Add in enough lime-sage water to barley cover pear slices and sage. Freeze for one hour or until frozen to hold pears and sage in place. Top off with remaining (very cold) lime-sage water. Freeze overnight.
  • For the Punch:

  • Stir together punch ingredients in a punch bowl. Unmold ice ring by quickly dipping into warm water and inverting. Float ice ring in punch.
  • Ladle into tea cup or coupe glass. Garnish with lime wheels, pear slices and serve.
