ingredients
- 1 1⁄2 cups all-purpose flour
- 2 teaspoons baking powder
- 1⁄2 teaspoon salt
- 5 tablespoons unsalted butter
- 3⁄4 cup milk
- 2 medium comice pears, peeled and sliced 1/8 inch
- 1 teaspoon ground cinnamon
- 1 cup brown sugar
- 1 egg
- 1 teaspoon vanilla extract
directions
- Preheat oven to 350 degrees F.
- Butter a 8x8-inch pan.
- Sift together flour, baking powder, salt.
- In a bowl, combine pears, cinnamon, and 1/4 cup of sugar, toss lightly.
- Cream butter and remaining sugar together, add egg and vanilla and mix till the batter is pale and smooth.
- Add milk alternatively with the dry ingredients, starting and ending with flour.
- Pour half of the batter into baking pan.
- Cover with pears, then pour the remaining half of the batter, covering the pears completely.
- Bake for 35-40 minutes, or until toothpick inserted comes out clean.
- Let cool completely.

Mmmm,this was yummy! I originally chose this recipe as I had some pears to use,then discovered they had gone all smooshy :( But I really wanted to try it,and found some tinned pears in my cupboard.I had no idea how this would alter it,but me and my partner loved it!Next time I would maybe add a little more cinammon with the dry ingredients,but only because I am a cinammon freak! Thanks for this yummy recipe. (Oh,we had this with warm custard on,and it was gorgeous that way too.)

This is quite possibly the best dessert I have ever had the chance to make. I used fresh pears from the tree in our yard and adjusted the recipe for the lactose intolerant. I used Silk plain soy milk instead of cow's milk and Smart Balance Light in place of the butter. It turned out wonderfully and is best heated up about 10 seconds in the microwave with a little bit of powdered sugar on top. Not too much though. The cake is sweet enough itself :)

I love food. I always think that's one of the few things in life we should all spend more time with, have more care in the food we eat and how and how much.
I moved to New York right after college. I work long hours, but that's the case at all financial consulting firms in the city. I cannot list all the perks involved with living in the city. There are so many amazing restaurants here. Some insanely expensive, some so cheap you can't believe. I have been having lots and lots of fun trying them out.
