Peaches, Bocconcini Ands Prosciutto Salad

SALAD
- 8 cups mixed salad greens (spring mix, arugula, baby spinach, etc)
- 3 ounces prosciutto or 3 ounces bacon, cooked and diced
- 2 cups europe's best sun ripe harvest peaches, thawed
- 1 cup bocconcini, pearl size (or regular bocconcini, sliced)
- 1⁄4 cup basil, chopped

VINAIGRETTE
- 1⁄3 cup white balsamic vinegar or 1/3 cup apple cider vinegar
- 1 garlic clove
- 1 tablespoon honey
- 1⁄4 cup europes best sun ripe harvest peach, thawed
- salt and pepper
- 2 tablespoons olive oil
directions
- VINAIGRETTE: Combine first 5 ingredients in blender. Add olive oil and blend until smooth.
- Arrange salad ingredients on platter and drizzle with vinaigrette. Refrigerate any remaining vinaigrette.

<br>I guess the dish that I am famous for is my Christmas ham - my family all comes home for Christmas, and if i don't have my ham they are dissapointed, and my grandson wants the pistachio squares!!! so I guess that is the dishes that I'm famous for.
