Peach Lassi

Peach Puree
- 5 1⁄2 ounces peaches (about 4 small or 2 medium sized peaches)
- 2 tablespoons lime juice
- 2 teaspoons lime peel, finely grated
- 1 tablespoon sugar
- 1 pinch turmeric

Lassi
- 1 cup yogurt
- 1⁄2 cup mineral water
- 1 tablespoon sugar
- 4 sprigs lemon balm
- 1 pinch cayenne pepper

Decoration
- 1 peach, cut into wedges
- 4 lemon balm leaves
directions
- Make the peach puree: Pit the peaches, cut into pieces and put into a blender. Add the rest of the ingredients for the puree and mix until smoorth.
- Put peach puree into fridge and cool.
- Make the Lassi: put all ingredients for the lassi into a blender and mix until foamy.
- Make the Peach Lassi: arrange the peach puree in 4 glasses. Carefully add the lassi on top of the puree.
- Put peach wedges for decoration on skewer and decorate the peach lassi with it. Decorate each glass with a lemon balm leaf.
- Don't mix the Peach Lassie. Serve them with a spoon, so that everyone can mix it or not.
- Note: if you like the spicy notes, you can add more cayenne to it.
- Note: you can sub the lemon balm leaves by peppermint leaves.
- Note: cooking time does not include cooling time.

Thorsten, This was wondefully refreshing, and very different with the cayenne notes coming though. I put peaches on the shopping list and DH came home with ones so hard that you could pave the street with them.. and necterines that were ripening FAST.. so mine turned into a Necterine Lassi :) Not the sort of substitution I usually do when making something for the first time, but it was a pity to waste the necterines while the peaches could have caused bodily harm to the blade in the food processor :) I don't think it really matters if You use different stone fruits, this is GEORGOUS ! I will be making this again as soon as my peaches go soft enough and I think that I will be making this often anyway as it's simple to make ahead and put into the fridge. You are right about hiding it...I should have hid it from myself LOL.. I intended to keep some for the next day dessert, but ended up going back to the fridge and eating the second serving ! Well this is the first time I have ever tried Lassi, in fact, I had never heard of it before! It was terrific! I used fresh lemon balm from my garden and locally grown peaches. What a treat! Although this was my first time trying this, it sure won't be my last! Thanks for another great recipe Thorsten!
