Peach Honey Butter

"Flavoured butters captured my attention during ZWT & I now even have a cookbook devoted to them. I struck gold at recipegoldmine.com, found 4 new varieties I could not find here at RZ & decided to enter them. This is the last, so I hope you will enjoy it & all the others b4 it!"

directions

  • Drain peaches of all liquid & place in a lrg bowl.
  • Add butter, cinnamon, nutmeg & honey.
  • Mash to chunky applesauce consistency & chill for 2 hrs b4 serving. (I personally favor a smoother blend of this mix using my immersion blender vs a coarse mash).
  • NOTE: Use w/English muffins, biscuits, scones, bagels, French toast, pancakes, waffles or whatever your imagination envisions.

  1. Yum! I decided to go with the extra smooth version and used my immersion blender and used fresh peaches I wonder if the reason the peaches and butter don't get completely smooth is the actual temperature of the peaches added to the butter. If the peaches are colder than the butter (that's what happened to me), the butter kind of seizes up when you add the peaches. Regardless, I put the butter in the microwave for 30 seconds maybe and if smoothed right out. I split the recipe into multiple tiny canning jars and MIGHT give as gifts if I don't eat it all first! I think next time I'll actually leave it more chunky and see if I like the small pieces of peaches! Thanks Twissis!

  2. For me this was just ok. I had hoped for more peach flavor and even added extra in hopes of getting more, and I also added a tiny bit of ground ginger trying to perk it up. I too had to melt the butter a little so everything would incorporate and I mixed it in my mini chopper. I would like to try this again with fresh peaches. Made for Culinary Quest 2014 for the Cruisin' Culinary Queens

  3. I thought it was a trifle bland, so I doubled the spices and liked it better. I also had to microwave it a little to get the butter to incorporate. I know it will be good on toast, so I tried it on grilled corn on the cob. Yup, it was good!

  5. I too could not get the butter to incorporate as nicely has I had hoped. We served this on pancakes for Christmas eve breakfast. Made for Football Pool 2009 week 14.

I am an American transplanted from Dallas to Iceland by marriage to a native Icelander & I retired to become his "Kitchen Queen". We love to entertain our family & friends, so I have an eclectic collection of recipes. I especially love simple, easy-fix, flexible & make-ahead recipes - BUT also like challenging myself on occasion. I enjoy baking & food photography. I am devoted to the "More is Always Better Principle" & apply it liberally to bacon, butter & garlic. I can have ingredient issues due to availability here in Iceland & my DH is medically diet-restricted from some ingredients as well. Either situation might require me to modify a recipe, but I will do my best to be true to your recipes & fair/honest in my reviews. Mary Pat (aka twissis)
