DIRECTIONS

  • Cook rice according to the directions on the box.
  • While the rice is cooking, heat oil in a large skillet and fry the chicken until it is fully cooked – then set it aside.
  • Fry the garlic, onions, and bell peppers for about 5 minutes, then add the carrot and broccoli and sauté everything for a few more minutes. When done, the broccoli should be hot, but not wilted.
  • Add the chicken back to the skillet and season everything to taste with salt and pepper (if you are unsure of how much seasoning to add, less is better – you can always add more if you want).
  • Serve ½ cup of warm brown rice topped with sautéed chicken and veggies. Makes 6 servings.
