Paula Deen's Roasted Carrots

"I buy the baby carrots already peeled and cleaned, but you can peel and quarter large carrots if you prefer. "House Seasoning" consists of: 1 cup of salt 1/4 cup of Pepper 1/4 cup of Garlic Powder It can be kept in a labeled shaker on your spice rack"

Ready In:


  • 1 lb baby carrots
  • 2 tablespoons olive oil
  • 1 teaspoon house seasoning
  • 2 tablespoons butter
  • 2 tablespoons parsley


  • Preheat oven to 350 degrees.
  • In a large bowl, coat the carrots with the olive oil. Toss with the House Seasoning and place in a Roasting Pan. Roast until tender, approximately 30 minutes. Remove from the oven and toss the carrots with butter and chopped parsley.
  • Enjoy!

    I used regular carrots, peeled and cut into roughly 1/2" chunks. Tossed with oil, salt and pepper, and a little garlic powder, then dotted with about 1 tbsp butter. Baked at 350 for about 35 minutes. Delicious and tender, everyone voted them "a keeper".

    Delicous and easy way to prepare carrots. I used regular carrots, cut them the size of baby carrots, and they took about 10 minutes longer to cook. Delicous, thanks for posting!

    These little carrots were excellant! I made them for my Christmas dinner this year and they turned out great. The only thing that I added was 2 tablespoons of brown sugar because that is the way my husband likes his carrots. Other than that I followed the recipe exactly, and was very happy with it. Thank you!
