Paula Deen's Broccoli Casserole

"On the day before Thanksgiving I got a frantic call from my best friend. She needed Paula Deen's Broccoli Casserole recipe! I looked on Zaar and couldn't find it so I am posting it now. She says it is the BEST broccoli casserole. I have to take her word for it since I haven't made it."

ingredients

  • 2 (10 ounce) packages frozen chopped broccoli, cooked and drained
  • 1 cup mayonnaise
  • 1 cup sharp cheddar cheese, grated
  • 1 (10 3/4 ounce) can condensed cream of mushroom soup
  • 2 eggs, light beaten
  • 2 cups crackers, crushed
  • 2 tablespoons butter, melted

directions

  • Preheat oven to 350°F
  • Spray a 13 x 9 inch baking dish with cooking spray.
  • In a large bowl, combine broccoli, mayonnaise, cheese, soup and eggs.
  • Mix well.
  • Place the mixture in pan.
  • Top with crushed crackers and pour the melted butter evenly over crackers.
  • Bake for 35 minutes or until set and browned.

  1. Can you prepare everything ahead of time beside the cracker topping and freeze? If so, do you allow to thaw before baking?
     
  2. I’m making this with French fried onions on top. I hope that’s ok and won’t ruin the recipe. Will let y’all know. (I drizzled danish creamery butter on top).

  1. Easy, filling, and delicious!!! I used Recipe #278160 in place the cream of mushroom, 1 egg, extra cheese, and about 2/3 a sleeve of whole wheat Ritz crackers. I actually forgot to melt some butter on top, but that didn't seem to affect anything :) I also had 1 poached chicken breast in the fridge, so I shredded that and added it into the dish. I served this with some cooked brown rice and a salad. This is going into the recipe box; thanks, Mary!
     
  2. add small onion saluted in butter- use a sweeter Mayo ( so it will add favor instead of grease), use frozen broccoli and don't cook it before hand. Make it the day before (not cooked) keep over night in refrig. and use cheese on top instead of crackers. I have been making this for 28 years. I always have to make 2 pans so other can take some home.

  4. This was very good but I found the mayonnaise taste overwhelming and I cut the mayo by at last a third. Next time I make this, I will either omit the mayo altogether or put in no more than 1/4 cup.
     
  5. Good basic recipe, but cream of mushroom soup? Really? If I want that many chemicals in my meals, I douse it in RoundUp. Too much MSG. Just saute some fresh sliced mushrooms in the same butter, add a half cup of sour cream, and delete the mayo. MUCH better and you taste both the mushrooms and the broccoli, not some chemically-laden soup.

  1. Delicious! I used 1/2 cup mayo and 1/2 cup sour cream (instead of 1 cup mayo), used one can cream of chicken soup (instead of two cans mushroom soup), one cup of cooked rice, and onion powder to taste. Huge hit with the 13 year old grandson. Oh, and did steamed fresh broccoli florets 4 minutes, then chopped before adding, instead of frozen.
     
  2. I use a can of cream of broccoli instead of mushroom soup.
     
  3. I cut the Mayo in half and added sour cream . I changed the mushroom soup to cream of chicken. It's amazing. I make it every pot luck it's requested.
     
  4. This is the BEST!!! I have to make it for every family get-together. I definitely half the mayo as others have suggested. I use a can condensed broccoli cheddar soup instead of cream of mushroom and I use Cheezit crackers instead of Ritz. I have tried multiple variations and this seems to be the favorite. You seriously can not mess this recipe up, it's so good!!!
     
  5. Great recipe if you add some fresh ingredients. Wash 2 large heads (discard stems) of broccoli, cut into florets and microwave, covered (Vented plastic wrap), for 3 min. in your baking dish. In 2 Tbsp. of butter, saute 1 C each chopped mushrooms and diced onions until softened. Add to broccoli in pan with cheese, soup, mayo (not eggs), mix and top with crackers and butter.
