  • Peel potatoes cutting into thick slices and set aside soaking on cold water.
  • Slice all the other vegetables and place in a baking dish with the oil, salt and pepper, and the potatoes.
  • Add just enough hot water to coat the bottom of your dish and cook in 350 oven until top becomes golden brown.
  • After you pull it out of the oven, you could sprinkle with Feta Cheese if desired.

  1. This was great. I did not use the oil and subbed canned tomatoes for the fresh/water. I topped it with walnuts instead of cheese. Yummy!
     
  2. This has so many good elements and tastes great. I tossed everything with the oil and spread into a shallow pan. I just covered the bottom of the pan with water. I did stir once or twice while in the oven. The addition of the optional cheese really finished this off nicely Thanks Janet. I will be making this again!
