ingredients

  • 4 boneless white fish fillets
  • 12 cup plain flour
  • 1 egg, beaten
  • 1 cup dry breadcrumbs
  • 14 cup grated parmesan cheese
  • 1 tablespoon chopped mixed herbs (dill and chives are nice)
  • 1 tablespoon ground nuts (macadamia, almond, etc)

directions

  • Dust fish with flour and dip in egg.
  • Combine breadcrumbs, cheese, herbs and ground nuts.
  • Coat the fish in this mixture.
  • Place on a greased foiled lined baking tray.
  • You can spray with a bit of cooking spray if you wish.
  • Bake for 15-20 minutes at 180 degrees C or 350 degrees F or until they're done.
  • Serve with home-made wedges, salad and tartare sauce.

    What a great way to add cheese to fish! Very good!!

    I gave this 4 stars more for the simplicity than overall flavor. I used Tilapia, macadaimia nuts, dill and chives. The fish turned out moist and flaked. We were expecting more flavor from this combination. Will will try this again but limit the amount of breadcrumbs and increase herbs.

    Made the almond meal version. I could eat a platterful of this fish, dale. So simple and soooo good.

    Thank you for this excellent recipe. I broiled the fish for about 8 to 10 minutes just until they flaked easily. You'll need to adjust cooking times based on the size and thickness of your fillets.
