Parmesan Crusted Cauliflower

- 1 head cauliflower, steamed and broken into florets
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 garlic clove, minced
- 1⁄4 cup breadcrumbs
- 1⁄4 cup parmesan cheese, plus
- 1 tablespoon parmesan cheese, divided
directions
- Preheat oven to 350 degrees.
- Arrange florets in a baking dish.
- Heat skillet. Add oil and butter.
- When butter is melted, add garlic and saute until garlic is tender.
- Add bread crumbs and 1/4 cup cheese. Toss well.
- Sprinkle bread crumb mixture over florets.
- Top with 1 tablespoon grated cheese.
- Cover and bake for 30 minutes.

This is a wonderful method to fix cauliflower! My husband and I both really enjoyed! I fixed as directed although I did have to leave it in the oven 10 minutes longer than called for. I was very pleased that the cauliflwer did not turn mushy. The topping was perfectly crisped. This will go on my "iix again" list. Thanks for a great recipe.
