Panera Bread Cafe's Sierra Turkey Sandwich

ingredients
- 2 1⁄2 cups heavy mayonnaise
- 2 tablespoons sugar
- 1⁄3 cup pureed chipotle chile in adobo
- 3 medium limes, juiced
- 20 wedges asiago cheese focaccia bread, split
- 5 lbs smoked turkey breast, sliced thin
- 2 large sweet onions, sliced very thin
- 1 lb field greens, washed, dried and chilled
directions
- Blend mayonnaise, sugar, pureed chipotle and lime juice together in a medium bowl. Cover and place in refrigerator for at least 30 minutes before serving.
- For Each Serving: On bottom piece of split foccacia, spread 2 Tbs. of chipotle mayonnaise. Top with 4 oz. turkey and 1 slice onion. Lightly cover with greens. Replace top of foccacia.
- Yield: 20 sandwiches.

I have never had a Sierra turkey sandwich at Panera. I saw picture on Instagram of someone eating the sandwich... I thought it looked good and searched out a recipe. I made this exactly as stated... I will admit I added bacon to the sandwich. Because I had nothing to base it On, I thought the sandwich was fabulous... So did my fussy 15-year-old. I have no idea what "too mayo tasting" was (another posters comment)... I did find it hard to measure out the right amount of chipotle peppers, I basically threw in two of them out of the can. It was not too much, but maybe enough to get rid of the heavy mayo taste. Oh one more thing, I toasted the sandwich so it was basically hot before I put on the Mayo mixture and lettuce. DELICIOUSO!

I love this sandwich at Panera. I've been trying to find the recipe for their Chipotle Mayo for a while. Saw this recipe on the internet and here so I thought I would make a (1/2) batch for the fridge. I made as your recipe states and tasted, but it seems heavy on the mayo taste. The one they use at the store is thinner and not so mayo tasting. Months ago, I had asked a store manager for the recipe but they don't have one - she did show me the nutritional guide. It also has garlic & onion powder listed and salt. I added a little of these for flavor but it's still quite mayo tasting. Next time I may try half mayo and half sour cream. Thanks so much for posting though. Gave me good guidelines to follow.
