Paleo Sandwich Bread

- 4 eggs
- 1 banana, ripe
- 1⁄2 teaspoon baking soda
- 1 pinch salt
- 1⁄4 cup coconut oil
- 1 -2 tablespoon spices (italian seasoning, minced onions, whatever you like)
- 1⁄4 cup coconut flour
directions
- Preheat oven to 350 F.
- Combine everything (except coconut flour) in blender and incorporate until well blended.
- With blender running on low, slowly add coconut flour to form a batter.
- Pour (may need spatula) into a 9x9in, parchment lined baking pan. Sprinkle additional spices on top.
- Bake for 30 minutes.
- Slice into four squares then slice each square lengthwise to make sandwich slices.
- Can keep in freezer - so make ahead for the whole week! :).
